Taco Salad!

We love tacos. Like eat them every single week love them! So when we started this whole grain free thing we were really sad.  The end result was a pile of toppings on a bed of lettuce and that seems to work perfectly!!

It’s really quite easy, cook the hamburger as you normally would for tacos.  If you have never made them before, just fry it up in a frying pan until it’s all cooked.  After it’s finished I add about a 1/4 cup of taco seasoning. I make my own in mason jars
from the recipe found here: Onion, Ranch and Taco Seasoning, one jar tends to last us just over a month or so.  On top of the seasoning I add about a cup of water and let it 20151102_164744boil/simmer away until the liquid is gone.

While the hamburger is cooking, I take that time to get the toppings ready, basically anything you enjoyed on your tacos is fair game.  Our favorites are: tomatoes, onions, sour cream, grated cheese and salsa. Hot sauce for my husband! We wash and dry our lettuce (salad spinners are the best!).

Then when it’s all done we put it all together! First we put a more than generous amount of lettuce, meat and then all the toppings on top  that we like.  By turning it into a salad we are able to keep our once a week taco date!
