I was going to do more dessert but I was missing ingredients lol! So we’re going to go with an oldie but good fall back meal when you want something healthy and filling! I have no recipe link for this, it’s out of my head, and just the way we’ve always made it!
- 5lbs potatoes
- 1lb ground beef
- frozen veggies of your choice ( or fresh if you have those to use up)
- some milk and butter to mash the potatoes
- 1 cup of shredded cheese and gravy (both optional).
In a pot, go ahead and peel and boil your potatoes. While they are boiling, brown your ground beef in another pan, and mix the veggies into the meat once it’s cooked. Set the meat mix aside. Mash your potatoes however you like to make them regularly, for us that means a couple tbsps of butter and a little cream or milk. Make the gravy according to the package directions (I know this part is the not-healthy part of the meal lol).
Put the meat mix into a casserole dish, since mine are all broken right now, I use a 9×13″ pan. Pour the gravy over the meat and mix it in. Spread your mashed potatoes over the top of the meat. Sprinkle the shredded cheese over the top of the potatoes. Bake at 350F for about half an hour or until the food is hot and the cheese is bubbling, and you’re done!
