This is a recipe I found at Kraft Canada while I was surfing Pinterest the other day. I used to have a ranch chicken recipe and I have lost it, so I was excited to maybe have another one I can use!
Original Recipe: Chicken and Roasted Red Potatoes
Ingredients:
So it’s pretty easy really, the first thing I did was get the chicken in a dish with the ranch, cover and stick in the fridge to marinate. While that is doing it’s thing, cook up your bacon. I had bacon for a couple meals coming up so I cooked an entire pound and put the extra away for other nights. Once the bacon is finished, drain a bit of the pan, but keep some drippings for your potatoes and onions. Add the potatoes and onions to the frying pan and fry them until they are almost cooked through, adding the crumbled bacon near the end so they are all mixed together. Put your frying pan mixture into the bottom of a 9×13″ pan. Take your chicken out of the marinade and lay it on top of the potato mix. Bake for an hour at 400F until your chicken is cooked and the potatoes are soft. Add your shredded cheese and parsley to the top and it’s done! I did add some green beans to my potato and onion mix as well so we would get more vegetables into the dinner. They worked really well in this dish!
It’s super good and I have definitely replaced that other ranch recipe that I lost lol I won’t be looking for it anymore! That’s what was left in the pan and I’m pretty sure it didn’t stay there very long lol
