Oven Baked Egg Muffins

So, there I was browsing Facebook this morning  (as you do of course), when I came across a post for oven baked egg muffins. Now I must admit that after taking one look at the photo on that social media site I had to give it a go. After a quick search online I was able to find a recipe and well, to put it bluntly, there were bloody gorgeous!

Here’s what you need! (Based on 4 muffins)

  • 4 Eggs,
  • 1/8 Tablespoon of Salt
  • 1/8 Tablespoon of Pepper
  • 1/8 Tablespoon of Paprika
  • 1/2 Cup of Milk
  • 1/2 Cup of grated cheese
  • 1 Tablespoon of Vegetable oil
  • 1/2 cup of chopped vegetables/cooked meat (as desired)

Preheat the oven to 180 degrees Celsius (350 Fahrenheit or those who use strange measurements).

Mix the eggs, salt, pepper, paprika, milk and oil together until it becomes one consistent mixture.

Line the muffin tin with butter to prevent the eggs from sticking.

Evenly spread the chopped vegetables/meat into 4 of the compartments, then repeat with the cheese and finally the egg mixture.

Place them in the oven for 20 minutes, then let cool for 5 minutes and then enjoy.

First time I made them today and it won’t be the last!
