Loaded Potato and Chicken Casserole

So since this was posted for the first time (Sept 2015) it has become an almost weekly staple! The kids are completely in love with it and it fills a spot in my meal plan where we get stuck on what to make! Here is the post!

I harvested all those potatoes, so now I had to figure out what to make with them! I actually grew quite a few this year, I better not waste them! This recipe is long and has a lot of time invested, but it was totally worth every minute!

Ingredients: 2lbs chicken breast cubed, 8 potatoes cubed, 1/3 C olive oil, 1.5 tsp salt, 1 tbsp pepper, 1 tbsp paprika, 2 tbsp garlic powder, 3 tbsp hot sauce, 2 C shredded cheese, 1 C crumbled bacon and 1 C green onions diced

For starters, I used real garlic instead of powder because I just didn’t have any lol and I skipped the hot sauce, we’re just not a hot sauce kind of family!

Pre-heat your oven to 500 degrees, and then mix up the oil, salt, pepper, garlic, paprika and hot sauce (if you’re using it).  Once you have that all 20150826_144549mixed up add your potatoes and let them sit for for about ten minutes. I am sure longer doesn’t matter because I forgot mine for a couple hours.  After you remember them, use a strainer to get them out of the solution, save the liquid because you are going to use it later for the chicken.

Put the potatoes into a casserole dish, and bake them, making sure to stir them every 15 mins so they don’t stick and they cook evenly.  While those are baking go ahead and cook the bacon.20150826_150140

Here again the recipe and I part ways a bit, it says to remove the bacon and then add the chicken to the bacon grease.  Maybe I bought super terrible bacon or something because my pain was FULL of grease, and I just wasn’t going to throw a pile of chicken in there lol I drained a bit of the grease off so there was just a little bit lining the bottom of my frying pan.  I didn’t feel like it was a good day to start a fire.  After your chicken is cooked, take it out and put it in the bowl with the liquid from the beginning, make sure it’s all nicely coated.

Add the chicken to the potatoes when they are finished baking and put them back in the oven for another 12 mins or so.  After that all you need to do is add your crumbled bacon, and cheese.  Stick it in the oven once again until it is all melty. Sprinkle the green onions over the top and then voila! You are done and you have an awesome dinner!
