Here ya go, you can thank me for this later! This ends up like a mousse/ice cream type yum that is totally diet approved! Great way to have something sweet and not derail everything!
Generally I keep a couple cans of full fat coconut milk in the fridge just as a rule, when they are in there they tend to separate, so you get a clear liquid on the bottom and the creamy part solidifies on the top. It’s this top part that you want to scoop out and use for this recipe. It is basically chocolate coconut whipped cream we’re making, same idea!
So you scoop out the thick part of the can, and mix with the maple syrup and cocoa. You can adjust the amounts listed as well so it’s more how you like it, in case you need more chocolate! Mix everything well with a mixer, I just use a hand mixer and then put the bowl in the fridge until it sets. It should get really nice and thick, then you can scoop into mini containers or just eat it right out of the container, which is what we do here!
