I kinda knew the day might come, my youngest has had various issues her whole life with eczema, and digestion, but psoriasis appears to be creeping up, or her eczema has gotten bad again. Either way those are all closely linked with Celiac disease which my husband is currently being monitored for. So we decided to take her off grains as well to see if her symptoms get better. Honestly, I don’t think I am going to make my 5 year old go through bloodwork etc.. if this all works and we know how to fix it. If she wants to go test for it later in life she can totally do that! Especially if her dads tests come back as positive. I can’t put her through all that when we know the answer!
Anyway she was starving and reminded herself this morning that she can’t have toast – which is her favourite thing to eat lol So her and I went online and searched for some easy looking grain free muffins, she chose carrot. That’s how we ended up with these!

Now these say cupcakes, I’m saying muffins lol The recipe comes with an icing recipe that we didn’t use, and we all know cupcakes without icing are now muffins haha If you aren’t new to gluten free/paleo baking then you should likely already have all the ingredients to make these, which is nice, nothing super weird happening with these. It’s incredibly straight forward, simple instructions that I was able to follow first thing in the morning lol I got 12 muffins out of it, so the yield is good. There is almond flour in the ingredients, so steer clear if you have nut issues, or taking them to public nut free events.
Totally recommend making these, and will likely continue making them here for breakfast treats when no one feels like eggs! A million thumbs up for this recipe!
