Original Recipe: Crockpot Fiesta Chicken
4 chicken breast (frozen or raw)
1 packet Fiesta Ranch dip (by the salad dressing)
1 can black beans (drained and rinsed)
1 can Rotel
1 can corn not drained
1 block cream cheese
Now I don’t live in the USA so some of these ingredients are not standard here and I usually have a hard time finding them, such as the dry ranch dressing and the rotel (which I had to actually google haha). So if you can’t find the ranch, or if you have an aversion to buying pre-packaged dry mixes, you can go here: Homemade Dry Ranch Mix and make up some of your own mix. Same with the Rotel, if you can’t find it, or would prefer to have your own on hand you can go here: Rotel Tomatoes to get a recipe to make your own, or if you want use some salsa, since it’s very similar.
Dump it all into your Crockpot and cook on low for 6 hours, or high for 4 hours, shred and eat with tortillas. Everything for the meal is in here so if you wanted to simply mix, top with some sour cream and cheese maybe, and just eat it the way it is, that works too. Especially for us grain free folk!
