We eat a lot of the salsa stuffed bacon wrapped chicken, you can find the recipe for that here: Salsa Stuffed Bacon Wrapped Chicken, but it got me thinking, if that’s so awesome there have to be other things we can stuff in our chicken and bacon wrap! So this recipe was born!
No link this time, because it’s out of my head! The ingredients are super simple:
- 5 chicken breasts (family of 6 here, feel free to adjust!)
- half a package of cream cheese
- two cubes of frozen spinach. Ours come in little frozen nuggets in a package. I left the spinach out for a few hours so it could thaw before making dinner
Slice the chicken down the middle length-wise without going all the way through to the other side. Then open the brick of cream cheese, and slice off a 2cm wide slice off the brick of cream cheese. Put that inside the chicken, adding a spoonful of spinach on top of the cream cheese.
Wrap all those chicken breasts up in bacon, you can use toothpicks if you need to, in order to keep the bacon where it belongs! Then, baked them at 350F for 50 mins or so until they were cooked all the way through. I am a chicken when it comes to chicken so even though I know at internal temp of about 165, if it doesn’t “look” cooked enough to me I keep cooking! You can always broil the chicken after it’s cooked in order to make the bacon a little more crispy!
