Well, trying to stay healthy on Shrove Tuesday makes things a teeny bit hard! So I did some Googling and found the biggest loser pancakes! Checked the ingredients and figured they had to be better than my plantain waffles I tried before!
Original recipe: Biggest Loser Pancakes
6 egg whites
1 cup rolled oats, dry
1 cup cottage cheese
2 teaspoons sugar
1 teaspoon cinnamon
1 teaspoon vanilla
Now because I have read a great deal of info about food with the paleo diet/whole food diet I have a huge aversion to throwing out egg yolks. Just about all the good part of the egg is contained in it! Instead of 6 egg whites, or buying the carton stuff like some posts suggested I kept the eggs whole and cut them back. So I used 4 whole eggs.
These are almost easier than regular pancakes because all I had to do was dump everything into the blender and blend it until it was all smooth! Jackpot! Heat up the frying pan and pour! I poured about half a cup for each pancake, and got 6 out of the batch. Which was fine for me since I made the kids regular old fashioned pancakes. I didn’t want to waste all this stuff for them to tell me it was awful!
