So I’ll apologize now for giving you this amazing recipe on Christmas Eve!! Unless you have all the ingredients on hand, and then you’ll be good to go and won’t have to go back out to pick stuff up! I also just learned that this is classic Canadian dessert! It still shocks me every time I hear of things that we do/eat that Americans don’t!
I didn’t make the little tart shells for these, I am sure you can, but the grocery store has them on sale so I bought
them instead. This recipe will make 12 butter tarts.
- 1/2 C light packed brown sugar,
- 1/2 C corn syrup,
- 1/4 C melted butter,
- 1 egg,
- 1 Tsp vanilla,
- 1/4 Tsp salt,
- 1/2 C raisins or pecans ( I used pecans)
First thing I do is lay out the tart shells on a cookie sheet, then sprinkle some pecan pieces in the bottom of each shell. Melt your butter and then mix all the rest of the ingredients together, I use a measuring cup so it’s easier to pour the mixture into the shells. Once you have the ingredients all mixed together and it’s nice and smooth, pour the mixture into the shells, filling them about 2/3 of the way full. They will boil during their time in the oven and will over flow if filled too full. Let them cool fully before eating! The inside can be really hot!
