I appear to be on baking streak even though this might not be considered baking since there is no oven involved! Seeing these mug cakes all over Facebook and Pinterest made me want one and it was great that I had most of the ingredients.
This recipe comes from Babble and is 2 Minute Chocolate & Salted Caramel Mug Cake. Sounds delicious right?!
Ingredients (for 1 mug):
- 4 tablespoons all purpose flour
- 4 tablespoons sugar
- 3 tablespoons unsweetened cocoa powder
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 egg – beaten
- 3 tablespoons skim milk
- 1 tablespoon vegetable oil
- 2 salted caramels (I sadly did not have these, but I soldiered on)
First I mixed all the dry ingredients into a bowl. I know that I am supposed to use just the mug only, but I found it hard to make sure that all the ingredients are mixed well. When I used the mug for mixing as well, I found it lumpy.
When I opened the microwave up, I found a grand surprise! The cake had grown out of the mug so high that it grew over the metal rack in my microwave. It melded and cooked all round it and I had to use a knife to get it off….FAIL! At least I learned a lesson: remove the rack before cooking more!
After I cut the cake off the rack, I shoved it back into the mug and ate it up! I thought it was really good for my first attempt. I wished I would have had the caramels (making a note to buy some now!). One thing of note, I thought that the cake was good, but it was a little dry. I like a more gooey-brownie consistency and not so cakey. I think there has to be a way to get it to cook that way, but I am not sure. More oil maybe? If you have any suggestions I would love to hear them!
