My husband has always been the smoothie guy, when we started eating better he needed something that he could have before work that would fill him up, hence the protein smoothie!
We’re pretty boring in the smoothie department, so I was a little freaked out when he saw carrot, ginger and mango smoothie on the almond milk carton and told me he thought it sounded great!

We thought okay “carrots, mangoes, ginger, we can do that!” Then I looked up the recipe and there was a whole lot more in it! Luckily I already own most of them so it didn’t hold us up!
Ingredients: 3/4 C Vanilla almond or soy milk, 1 C fresh or frozen mango, 1 C spinach, 1/4 C carrot juice, 1 tsp lemon juice, 1 tsp fresh grated ginger, pinch of cinnamon, 1/2 C ice, 1 tbsp protein powder (optional) and 1 tbsp ground flax (optional)
We didn’t have carrot juice, that was the one thing we were missing, we simply grated 1/4 C of carrot, and we really guessed a lot on the ginger, we ended
up for some reason guessing about an inch of grated ginger would work. I mean ginger is good! We threw all the stuff in the blender together except the flax, it was buried in the cupboard and we didn’t bother going to find it!
It really surprised me, once we got it all blended, it was actually quite good! The crazy amount of ginger we added ended up burning my mouth though! I only had a little bit, but my husband drank a huge glass on his way to work, and he didn’t mind the burning the ginger left. In hindsight, I will likely do a better job measuring the ginger, but I will for sure be making this again!
