I found this recipe on Pinterest while trying to find a way to spruce up meatloaf (we do a lot of meatloaf), and I was hoping to find some different ways to make it not so boring all the time!

- 1 lb lean ground beef
- 1 tsp salt
- 1/2 tsp black pepper
- 6 oz cream cheese (I used a whole package)
- 3 eggs
- 1 lb mushrooms
- 2 tbsp butter
- 1 tsp seasoning salt (I skipped this all together)
- 1 tsp dried parsley
- 1/4 tsp black pepper
- Grated cheese (optional)
Start by cooking the hamburger in a frying pan with the salt and pepper, once completely cooked set it aside to cool. This is where I stopped following the instructions…
I didn’t use my food processor, as per the recipe, I simply just mixed the room temperature cream cheese in a bowl with the eggs. I then dumped the cooked hamburger into the bowl with the cheese/egg mixture and set aside again. I continued with cooking the mushrooms with salt, pepper and parsley until they were cooked. Once the mushrooms were finished, I dumped them into the hamburger, and mixed it all up. After it was mixed I put it in the casserole dish, topped with cheese and put it in the oven to bake.
The recipe calls for 25 mins at 350F which is what I did. The meat turned out great, and I have a feeling if I had of read the instructions better it would have been even better. The way I made it you kind of lost the mushrooms and I think if I had of put them on top I would have tasted them more. It was likely a blessing in disguise since I think if they were on top my kids would have refused to eat it!
We paired this with salad, our go to side dish and I think I will definitely will try this one again!
