I don’t know about you guys, but May means warm weather is coming, and that usually means Potluck season!! We made this last summer many times to take with us all over and it’s amazingly easy and super delicious!
Original Recipe: No Bake Strawberry Icebox Cake
3 lbs. fresh strawberries, sliced
2 (8 oz.) tubs fat-free whipped topping (or use regular or light)
1 (14.4 oz.) box graham crackers
1/4 cup milk chocolate chip morsels
This recipe is seriously the easiest thing ever! Get your kids to do it and you go read a book or something lol It’s all layers, so start with some of the whipped cream spread over the bottom of a 9×13 inch pan. Then layer some graham crackers over the whipped cream. Follow that with more whipped cream, and then a layer of sliced strawberries, and repeat. Now when we did this, I actually ended up using more whipped cream and less of the strawberries. That could have been because my strawberries were bigger, since you can’t really uniform strawberry size, but it was still delicious and we totally loved it! Once you get the pan filled up with layers, put your chocolate chips into a baggie (like a ziploc) and microwave at 10 second intervals until it is melted. Clip off the corner of the bad, and squeeze the chocolate out over your cake in whatever design you fancy. Stick the whole thing in the fridge for at least 4 hours, or overnight, until the crackers have softened. See? Super simple, perfect for summer potlucks!
