No Bake Cherry Cheesecake


The 29th of February is my anniversary.  This is officially our *first* real one so I thought I’d make our favourite cake, simply because we’ve been trying to watch our health and haven’t had cheesecake in what feels like forever!  This is also the easiest one I have ever found and I love it!

Ingredients:

  • 1 brick of cream cheese (room temperature)
  • 1 pre-made graham cracker crust (or you can make your own!)
  • 1 can of sweetened condensed milk
  • 1/3 C of lemon juice
  • Cherries! Or whatever fruit you feel like lol

Simple, ready? Mix the cheese and milk with a hand mixer. Get your pie crust ready to be used, mix the lemon juice in the cheese mixture. It will start to firm up right away so once it’s mixed get it into the crust and smooth it out. Put it in the fridge for a few hours or over night. It’s very forgiving so if you need it fast, it doesn’t really have to be in the fridge that long! Add your cherries to the top and voila! A perfect dessert!
