I have made this a few times since I got this recipe given to me, I put paleo-ish because I use real butter instead of the coconut butter, so that puts the recipe on the edge of whether or not it’s paleo but in my opinion it’s splitting hairs! If you can’t tolerate dairy, use the coconut, if you like butter better, use butter. It’s all better than the alternative recipes for carrot cake out there! Either way this recipe should help anyone keep their new years resolutions!
- 1.5 C almond flour
- 1/2 Tsp salt
- 1/2 Tsp baking soda
- 2 Tsp cinnamon
- 1/2 Tsp nutmeg
- 1/4 C shredded coconut
- 3 large eggs
- 1/4 C butter
- coconut oil to grease your pan
- 1/4 C honey
- 1.5 C grated carrots
- 1/2 C nuts (walnuts etc… optional)
Pretty straight forward instructions here, dry stuff gets mixed in one bowl, wet ingredients get mixed in another, then add the wet to the dry and mix thoroughly. Use the coconut oil to grease an 8×8 pan, or 8″ round cake pan and dump the carrot cake mix into it, bake at 325F for about 45 mins. My oven runs hot ( I need to call them and get it fixed) so I’ll start checking it about 30 mins in to make sure I don’t burn it all. It should be springy but not wet. You can make some cream cheese icing (not paleo cus cream cheese), by mixing 1 stick of butter, 1 block cream cheese, 1/4 C honey and 2 Tsp vanilla, whip that up with a mixer and it’s perfect to ice your carrot cake! I won’t be getting a photo of that since my cake won’t be cool enough in time to get it iced before this post goes up! Next time maybe haha
